eSATA on Mac Pro?

If my specs mention that I can use eSATA on my Mac Pro, how do I figure out which card I need and if I have SATA2 drives left over and not in use, I can just get an eSATA case to house them and use normal sata cables right?

2) How many drives do you want to support ?

3) Do you need any kind of RAID protection (RAID 0, 1, 3, 5 or 6) ?
