Bumper post to start off then - here's some recommended freeware, which is just a fraction and most of the apps i use/have installed.

App Launcher/Keyboard Interface

Quicksilver - An extensive tools that integrates into your system, from it's simplest level of an application launcher, using the keyboard interface Quicksilver can be so much more.


Back-Up Utilities

SuperDuper - Back up and clone your drives with this great tool

iBackup - A simple backup and restore utility, supports scheduled backups of files, folders and applications.


Browsers

Firefox - A top browser, now going into version 3 which is reportedly faster and a better performer all round - my personal browser of choice.

Opera - A most worthy browser that is to a lot of peoples liking, and have to admit i like most of it's features too.


CD/DVD burning

LiquidCD - LiquidCD is a freeware for burning CDs and DVDs built for Mac OS X. But LiquidCD is more than a burning software and has useful built-in features

SimplyBurns - simple and straightforward burning


Communication

Adium - The best multi account instant messenger including jabber and gtalk amongst the regulars along with many more.

Psi - Psi is a free instant messaging application designed for the Jabber IM network (including Google Talk)


FTP

Cyberduck - The best and easiest in use of ftp clients for osx.


Maintenance

AppDelete - Saves you going around deleting everything manually.

IceClean - A powerful general maintenance application bringing you the power of UNIX - akin to the likes of TechTool, a worthy addition to your arsenal it WILL come in handy.

MainMenu - Handy menu bar maintenance app to save you the time and effort.


MS Office Alternative

NeoOffice and OpenOffice - Essentially the same suite, this is your chance to say goodbye to MS Office and save yourself the money and hassle - NeoOffice is a little better at the moment as OpenOffice is just becoming OSX native.


Network Tools

Bwanadik - I only recently discovered this one, menubar app creating a shortcut to most of your network preferences, most notably displays your connections and external/local IP addresses.

CoconutWiFi - WiFi network detection.

iStumbler - Wireless discovery app, find those wi-fi hotspots, bluetooth devices and bonjour services.

OSXvnc - Freeware VNC server.

Chicken Of The VNC - VNC Client.


Photography

JetPhoto Studio - This is one awesome app, photo library, image correction, flickr uploader and photo web gallery creater all in one - option to upgrade to Pro version.


RSS Readers

Vienna - RSS reader with some nice features, including growl integration, menubar icon, tabbed viewing of articles/subscriptions along with a few others.


Text Editors

Textwrangler - General purpose, powerful text editor.


Screen Capture

InstantShot - Sits in your menu bar adding extra screen capture features than the inbuilt ones.

SnapnDrag - Screen capture made easy.


Miscellaneous Utilities

Calq - On demand calculator, activate with keypress do your calculation and then it hides until needed again.

Desktop Manager - If you have machines that are not compatible with Leopard and you want virtual desktops, then look no further, the site says it is alpha quality but it works perfectly well and I use it on 10.4.11 - still going strong here

Growl - System notifications preference pane add on, plugs into an array of applications and system areas letting you know what is happening - including firefox, quicksilver, adium, mainmenu and vienna.

MagiCal - Handy menubar calendar and clock app.

Password Gorilla - Registrations and logins manager.

PTHPasteboard - Useful Utility that keeps a record of your pasteboard handy.

UnRarX - Simple RAR extraction utility.

Here's some more:
  • The Unarchiver - for unpacking stuff. That's the only thing on the list that I missed
  • Azureus - I think it's the best torrent app on the mac. Hogs memory, but the other alternatives suck
  • X-Chat - The best IRC client
  • MAMP - Easily setup Apache/MySQL/PHP server. Great for web devs who test locally.
  • Clean Archiver - For actually making archives
  • Image Well - Easily upload pics to your server and then copy the URL to clipboard. Amongst other things.
  • OnyX - Great general OSX tweaking util
  • SmartSVN - Offers a free foundation version. Excellent app for working with SVN repositories.
  • VLC - If Quicktime won't open it, VLC will

And just to emphasize... Quicksilver is the one app that every single mac user needs to get. Even if you think you don't need it, you do

cool - not heard of x-chat before, i usually use colloquy - funny you should say about quicksilver, i've just had someone say it's a resource hog, yet i haven't had any problem with it, this is the same guy that said firefox was the worst browser, oh well.

I've never had a problem with Quicksilver either. Was a bit quirky on Leopard, but they released an update that fixed it.

Firefox isn't all that great on the Mac, but I still love it. It does leak memory (well, does that on all platforms!) but it also doesn't really fit in with the look of the system. I hear 3 is supposed to fix a lot of that, though.

I've been using Safari 3 since I upgraded to Leopard. I miss a couple of my plugins from Firefox, but the speed is what makes up for it. Just general surfing around I use Safari, and when I need some hard-core developer tools I use Firefox.

HandBrake v0.9.1

HandBrake is an open-source, GPL-licensed, multi platform, multi threaded DVD to MPEG-4 converter, available for MacOS X, Linux and Windows.
With this application you can use to convert DVD's to MPEG-4 videos. Adjust video output size output bit rates, You can put a DVD video on your iPod or any other MPEG-4 video capable device. Screen shot and download link below

go back to the classic 2D scrolling platform adventures with this addictive game.

Freeciv

A port of the classic Civilization game.

Battle For Wesnoth

An epic RPG, very extensive with add-on scenarios and ability to create your own.

Head Over Heels

A classic from way back, now reborn on the Mac.

Blackjack International

Great casino card game - pit your wits against the the dealer and four other AI players.

Otis

Addictive puzzle game.

Quinn

Tetris on your Mac.

Dinky Dungeon

Adventure RPG game, nintendo style.

Transport Tycoon

The classic game brought to osx.

Open Arena

Game based on Quake 3 engine.

JSokoban

The classic Mac puzzle game.

Quackle

Play scrabble against AI opponent.

An interesting game, not got into this yet but i'll keep plugging away - a new take on the tetris style games.

Obviously there are a load more I could have listed, these are just the ones I have been interested in enough to download and play.

Midnight Mansion

Awesome return to classic retro 2D side scrolling platformers.


Titan Attacks

Space Invaders rule!


Argonaut

Nice take on the Asteroids game.


Rocochet

Really nice Breakout/Arkanoid style game with a twist.

Virtual Box.

I love that application you don't need to spend piles of cash to get the functionality or effectiveness of VMware fussian on your Mac. Very handy if you still need to play with windows from time to time, It's free an from Sun.

I have XP, Solaris, FreeBSD ad a few more VM's in it on my macbook right now.
